Grilled Sichuan Buttered Peaches with Toasted Walnuts
Juicy peaches are grilled to caramelized warmth, then brushed with a spicy, nutty Sichuan butter and topped with crunchy toasted walnuts for a fresh summer dessert with a subtle kick.

Method
How to make it
- 01
Preheat a grill pan over medium-high heat until hot and lightly smoking, about 5 minutes.
- 02
In a small bowl, combine the softened butter with finely ground Sichuan peppercorns, honey, soy sauce, and chili flakes until smooth and well mixed.
- 03
Place peach halves cut side down on the grill pan and cook until grill marks appear and the peaches begin to soften, about 3–4 minutes.
- 04
Flip the peaches and brush each cut side generously with the Sichuan butter mixture.
- 05
Grill the peaches cut side up for another 2 minutes, allowing the butter to melt and soak in while peaches finish softening.
- 06
Remove peaches from the grill and transfer to serving plates, spooning any melted butter from the pan over them.
- 07
Sprinkle toasted walnuts and sesame seeds evenly over the peaches, then garnish with fresh mint leaves.
- 08
Serve warm to enjoy the contrast of smoky, buttery, spicy, and nutty flavors.

Cooking tips
- Toast Sichuan peppercorns in a dry skillet over medium heat until fragrant, about 2 minutes, then grind finely for maximum flavor release.
- Use ripe but firm peaches to ensure they hold their shape on the grill without becoming mushy.
- If you don’t have a grill pan, use an outdoor grill or a broiler and monitor closely to prevent burning.
- Make the Sichuan butter in advance and keep chilled; soften slightly before spreading on the peaches for even coating.
