Sheet-Pan West African Sweet Potato Hash with Spiced Butter Eggs

Method

How to make it

    Preheat the oven to 220°C (425°F). Line a large rimmed sheet pan with parchment paper.

    Toss the cubed sweet potatoes with vegetable oil, salt, and half of the smoked paprika. Spread in a single layer on the sheet pan and roast for 15 minutes.

    While the sweet potatoes roast, melt the butter in a small saucepan over low heat. Stir in ground coriander, ground ginger, remaining smoked paprika, cayenne pepper, and minced garlic. Cook gently for 2 minutes until fragrant, then set aside.

    Remove the sheet pan from the oven and add the sliced sausage, diced red bell pepper, and red onion evenly over the sweet potatoes. Drizzle half the spiced butter over everything and toss gently to combine. Return the pan to the oven for another 10 minutes until vegetables are tender and sausage is warmed through.

    Make four small wells in the hash and carefully crack one egg into each well. Drizzle the remaining spiced butter over the eggs and hash.

    Return the pan to the oven and bake for 7–10 minutes, or until the egg whites are set but yolks remain slightly runny (or cook longer to your desired doneness).

    Remove from the oven, season with additional salt and black pepper, and sprinkle with chopped fresh parsley before serving.
